• Coconut flour
  • 2-3 lbs wild caught cod fish
  • Butter
  • Salt and pepper to taste
  • Garlic powder
  • Coconut oil

Rinse off the fish, and don’t pat dry. Lay on a cutting board and salt and pepper and garlic powder both sides. Dredge fish in coconut flour, and fry in butter (I generally end up using nearly a stick), gently using spatula to lift and turn fish as it browns. This works best in a non-stick pan, as the crust comes off easily.

Serve with tartar sauce made with homemade mayonnaise mixed with sweet pickle relish, melted butter or just chomp down alone, it’s good no matter what!
